IBIZAN FOOD IS ON THE CUSP OF A REVOLUTION
This autumn come to discover ibizan gastronomy!
“Autumn, like spring, is long an luxurious, a time of renewal on Ibiza. The island, parched from summer dun, grows vibrant and green from intense rains that leave scrubbed blue skies. Gardens are again prolife: lettuces, herbs, green beans, all things too delicate to survive the neat, grow back. Summer’s tomatoes, peppers and aborigines can keep cropping into October and even November. Spinach, pumpkins, pomegranates, apples, beans and sweet potatoes are all in harvest, too. Hunting wild mushrooms, our very favorite of all foraging, begins just after the first cold rain. This is the season of Ibiza’s ancient, mythic fruits: olives and figs”
This is a little part of “Eivissa” the first recipe book to showcase the incredible Ibiza cuisine.
Anne Sijmonsbergen, a cook and artisan producer on the island, has been on an odyssey to discover the heritage and culture of Ibiza’s cuisine.
Here she recreates the traditional and contemporary recipes with her own vibrant twists to create memorable, evocative meals at home.
Divided into seasonal chapters to showcase the ingredients in Ibiza, the gorgeous recipes reflect the heritage of the cuisine, yet with contemporary twists. Sample a really simply Grilled Courgette Ribbons, Asparagus & Mint Tostada from Spring, or a Grapefruit & Juniper-Encrusted Pork Salad. Try Steamed Mussels with Samphire or Chicken with Roasted Figs from Autumn. Or treat yourself with a Ricotta Pine Nut Cake or Spiced Chocolate Truffles.
